Single Serving: Weeknight Fusilli With Pink Sauce

In this episode of “Single Serving,” Chef Amber Sullivan shows us how to make a Gigi Hadid-inspired spicy fusilli with pink sauce for one. This dish comes together so quickly and tastes like your favorite restaurant entree—only you don’t have to change out of your comfy sweats to enjoy it.

Ingredients

  • 1 C fusilli or pasta of your choice
  • 2 garlic cloves, minced
  • 1 Tbsp butter or olive oil
  • 1/2 tsp chili flakes
  • 1 Tbsp tomato paste
  • 1/3 C cream
  • 1/4 C reserved pasta cooking water
  • 1/3 C shredded Parmesan cheese
  • Pinch of salt and pepper, to taste
  • Handful of torn basil leaves

To Make

  1. Cook pasta in salted boiling water until al dente (1-2 min short of cooking time on package)
  2. Strain pasta, reserving 1/4 cup of pasta water, and set aside
  3. In a pan over medium heat, sauté garlic in butter or olive oil until fragrant, then add chili flakes
  4. Add tomato paste and stir until it has deepened in color
  5. Add cream and stir until smooth
  6. Let simmer for 1-2 min, until sauce has thickened
  7. Fold cooked pasta into the sauce and add reserved pasta water
  8. Simmer until pasta is cooked to your liking
  9. Turn off the heat; stir in parmesan and basil leaves
  10. Add a pinch of salt and pepper, to taste, and top with more Parmesan or basil
