5 Breakfasts You Can Meal Prep on Sunday

They say the early bird gets the worm and productivity experts agree a good morning routine sets everything off on the right foot. Here are some ideas for no hassle, wholesome breakfasts you can prep ahead. 

Overnight Oats

The overnight oats trend isn’t going anywhere. And we know why. Tt’s easy, healthy and affordable. 

Basic overnight oats recipe

  • ½ cup oats
  • ½ cup dairy or non-dairy milk of choice
  • ½ cup of fresh or frozen fruit
  • 2 Tbsp of chia seeds
  • 1-2 Tbsp of nut butter 

Add a few tablespoons of Greek yogurt or dairy free yogurt for more creaminess and flavor. Stir and leave in the refrigerator overnight. Top with shredded coconut, chopped nuts and granola for more crunch. Note: Make an assembly line of mason jars and make multiples at once.

Breakfast Sandwiches

Eggs and breakfast meat sandwiched between a bagel, English muffin, or your favorite gluten free bread, is sure to put a smile on your morning face. Here’s a basic recipe to make four to five sandwiches.

  • 6-8 scrambled eggs
  • 4-6 slices of cooked bacon, cooked ham or other meat substitute
  • Sliced cheese of your choice
  • Bread, English muffin or bagel

Add eggs, meat and cheese to your choice of bread and warm in the oven until melted. Let sandwiches cool, wrap in foil and refrigerate for later. Warm your sandwich up in the microwave and enjoy.

Egg Bites

Muffin tins filled with eggs, veggies, cheese and fresh herbs is about as easy as it gets. Here’s a basic egg muffin recipe you can adapt with whatever mix-ins suit your fancy.

  • 12 eggs, mixed
  • ½ cup of chopped onion
  • ½ cup mixed veggies
  • ½ cup of cooked breakfast meat
  • ½ cup shredded cheese
  • 1-2 tsp of your favorite spices or fresh herbs
  • Salt to taste

Spray your muffin tin with cooking oil. Pour mixture in muffin tins and bake in an oven preheated to 350 for 20-25 minutes.

Chia pudding

  • ¼ cup of chia seeds
  • 1 cup of milk or non-dairy milk
  • 1 Tbsp of maple syrup, honey or agave
  • Add-ins like fresh fruit, nuts and granola

Breakfast Bento Box  

Bento boxes are fun to customize and convenient to grab on the way out the door. 

Mix and match any of these ingredients until your compartments are full. 

  • Hard boiled eggs
  • Yogurt
  • Raw veggies
  • Nuts 
  • Fresh fruit
  • Cooked turkey bacon
